Lactic acid can be converted to acetic acid by some acetogenic bacteria relatively easy, mostly to acetic acid and propionic acid (but the latter is not so easily degradable). But acetogenic bacteria need relative high pH (pH 4 to 6). So at lower pH level it will not be degraded as it will hardly, too, if propionic acid accumulates.
