Hello Len What scale of project are you looking for? I worked at a foodwaste digestion plant in Hawaii that digested 12,000 tons per year of source-separated foodwaste from restaurants and hotels, and operated from 1986 to 1999. It is written up in the November 1999 issue of Biocycle, "Life and Times of an Organics Recycling Company" by Matt Lyum. If you'd like more info you can email me. Marty Climenhaga, M.S.
