You might be intending to send plain text, but Microsoft feels that you
don't know what you really want so it's sending out plain text in MIME
format.

On the top of outlook select 'tools', then 'options'.  When the screen pops
up select the "Send" tab, down where is says  "Mail sending format" select
plain text.   But, it's a Microsoft product so you're not done yet.
Apparently Microsoft feels that there are different types of "Plain Text".
Click the button labeled "Plain text settings", select "MIME" and where it
says "Encode text using..." select "None".
