In Mexico, get in touch with Bill and Athena Steen 
<absteen@dakotacom.net>.  They're involved in a wonderful ongoing 
project in Cd. Obregon known as Casas Que Cantan (houses that sing).

In Chile, contact Dane Judd <dsjudd@entelchile.net>.  He poured slab 
in mid December for his straw bale home, and is aware of a number of 
other Chilean SB homes.

Also check out the Eco Travel In Latin America site - 
http://www.planeta.com .  A good number of ecolodges are listed 
there, and you can probably find some with projects you can join.
