I wonder if you could at least try to look into buying salvaged cabinets for
the project. In our area our local reuse organization often is trying to
get folks to take out cabinets from larger commercial buildings that are
being torn down. (In one case a restaraunt, and they often have houses.)
these are often quite cheap, if they are made with VOC's a significant part
of the outgassing has already happened, and if they are solid wood, or
plywood, box construction- they can be moved well. Older cabinets have good
structural integrity. Plus, they do not create a demand for new wood
products, and could be reused again.
On the down side, you would have to design around what you could find, and
possibly design each unit individually. I know no one wants to do that.
Just thought the suggestion should be one of the ones under consideration.
