For windows - I like fiberglass but then again I'm biased -
 
Your note on copper tubing around a fireplace - only one note of caution - I've heard that this can actually decrease the efficiency of your fireplace and this may not necessarily be a good idea - there are fireplaces that can be purchased that can heat hot water - but it's not just any stove.

building a timber frame home,
wondering what peoples opinions are the best windows out there?
 
also,
will be off the grid,
would like to heat the water with copper pipe around the stove pipe, any thoughts and would storage be easiest in a hot water tank that is not hooked up?
