Remember, the reason the early Nebraskans (sp?) used hay/straw was that there was no wood! There was no wood because it was/is so dry in the sand hills of Nebraska.

I lived there for a while really saw how dry it is. I watched the progress of a guy stripping all the paint off his car, then finally priming it about 10 days later. All the while, the bare metal never rusted.

Nothing like a lack of water to slow down deteriorating of the straw...

OTOH, the original Nebraska homes were baled hay, not straw. 
Presumably it was well dried first.  Maybe they were just lucky.
