my response is not straw bale specific ----

yes builders underestimate the time
architect drew something almost unbuildable and details had to be figured out on site
many changes were made during construction that elongated the process
lack of building skills could be
materials were not readily available locally - such as custom cabinets with long lead times
weather
waiting for subs who were busy elsewhere   (and every time I think I have a set of reliable subs, one goes off the deep end or leaves for 6 weeks with no notice or----)
ran out of money
