Ah, I was just going to get to saying that, and Michel saved me the trouble.
I would add that a variation is to attach a rough screed to the bottom plate
and/or toe-up, then put a finished (protruding) base over that.  However, I
quite like the look of a wood base flush with the plaster...and it's easier.

Easiest of all is a very fine and delicate baseboard of....paint.  Good,
tough paint, easily touched up.  Comes in many colors, too.

We've also used rope glued and nailed in the corner between the wall and the
floor; this can also be painted/dipped and conforms well to a wiggly wall.
Designs can be stenciled on the floor and grow up onto the wall, as well.

We definitely prefer some sort of base or tile to be in place when the
plaster goes on--it's easier to conform the plaster to the base than to set
the base, even tile, onto an irregular plaster...with one exception.  Small
mosaic tiles will follow just about any surface.
