Your workshop sounds FASCINATING!  My SB will be breaking ground about then
(in Calaveras County, CA), so I won't be able to make Tucson.  Have you
considered video-taping this workshop (and others) so that they could be
made available for purchase?  I would definitely be interested in this one!

Don't know if you are interested beyond just seeking info, but Athena
and I are doing an oven building workshop in Tucson on December 7th.
The workshop will focus on an oven with no smokehole or chimney.  After
years of experience with these things (Athena - her entire life), we
feel that the type we will build outperforms just about anything else.
